波士頓大雪,在家裡蹲了好幾天,
剛好前陣子買了一台ninja,有打 cookie dough 的功能,
所以這幾天做了好幾種餅乾,
以下幾種是我家喜歡吃的,來把食譜記錄下來。
Scottish Shortbread
- 1½ cups flour
- 1/3 cups sugar
- 3/4 cups butter
- 350F for 20 minutes until edges have slight color
Pinwheel Icebox Cookies
- vanilla dough
- 1 stick butter
- 1 cups sugar
- 1 eggs
- 0.5 tsp vanilla
- 1.75 cups flour
- 1.5 tsp baking powder
- 1/4 tsp salt
- chocolate dough
- 3 tsp cocoa powder
- same ad vanilla dough
- make both dough, roll out to flat sheet, and roll into a bar, freeze for 1 hour
- after freezing, cut into circles
- 350F for 20 minutes
Lemon Icebox Cookies
- 1 Tablespoon Lemon juice
- 1/4 tsp salt
- 1/4 cup sugar
- 1/2 stick butter
- 3/4 cups flour
- make dough into a bar, freeze for 1 hour, then cut into circles
- 350F for 15 minutes
Lemon Thyme Cookies
- 1 stick butter
- 1/3 cup sugar
- 2 Tbsp thyme
- 2 Tbsp lemon juice
- 1/2 tsp baking powder
- 1 1/4 cup flour
- 350F for 15 minutes
Parmesan and Thyme Cookies
- 1 stick butter
- 3/4 cup parmesan cheese
- 1 Tsp thyme
- 1/4 tsp salt
- 1/2 tsp black peppers
- 1 1/4 cup flour
- 4 tsp water
- 350F for 20 minutes
Oatmeal Raisin Cookies
- 10 tbsp butter
- 1.5 cup flour
- 1.5 cup steal cut oats
- 1/2 tsp salt
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 1 tsp baking powder
- 1/2 cup sugar
- 1 cup raisins
- 1 egg
- 1.5 tsp vanilla
- 350F for 13 minutes
